Rosemary EVOO and Peach Balsamic Vinegar 

Simple Summer Salad

Approx. 4 servings 


  • 8 + cups of greens (spinach, argula, butter lettuce, etc)

  • Approx. 2 peaches, sliced to desired size 

  • Approx. 1 cup of grape tomatoes, halved 

  • 1/2 cup of crumbled feta

  • 1 /4 cup of sliced almonds

  • 4 - 6 grilled chicken tenders, sliced to desired size

  • 1/2 cup of Rosemary EVOO

  • 1/2 cup of Peach Balsamic Vinegar

  • Salt, pepper, crushed red pepper and lemon juice to taste


  1. Prepare chicken however you like, I recently got a new grill - so I've been grilling everything :)

  2. Chop greens, peaches, cherry tomatoes and almonds

  3. In a small bowl prepare dressing by whisking together Rosemary EVOO, Peach Balsamic Vinegar, salt, pepper, crushed red pepper and lemon juice 

  4. Prepare salad in a large bowl by adding greens, grape tomatoes, peaches, almonds, toss these ingredients first, then add feta, chicken and dressing and toss again. Enjoy :)

Notes / Add ons:

- Great add ons: farro, quinoa, cucumbers, mushrooms, etc. The options are endless, I usually use whatever I have in my kitchen!

- Use any EVOO / Balsamic Vinegar pairings.  I also love our Lemon EVOO and Neapolitan Herb Balamic Vinegar as a salad dressing! 

- I pack this as a lunch often and assemble it per serving!
