Easy Spring Salad

with Strawberry Balsamic Vinegar and Lemon EVOO


  • 2 teaspoons finely chopped shallot 

  • 1/4 teaspoon salt 

  • 1/4 teaspoon ground pepper

  • 6 cups of baby spinach

  • 2 cups of chopped romaine

  • 1 cup of sliced strawberries

  • 1/4 cup of crumbled feta cheese

  • 1/4 chopped pecans 

Add ons:
  • grilled chicken
  • roasted chickpeas
  • quinoa 


  1. - In a small bowl mix together Lemon EVOO, Strawberry Balsamic Vinegar, chopped shallot, salt and pepper.  Set aside

  2. - Add spinach, romaine, feta, walnuts, and strawberries to a large bowl and mix.

  3. - Toss dressing over salad, and continue to mix until dressing is evenly dispersed
